In a pot over the heat, heat the water and add coarse salt, coriander seeds, anise, bay leaves, a cinnamon stick, and garlic. Let it boil, then simmer for 30 minutes until warm.

Add vinegar to the warm (not hot) spiced water.

Place the sliced onions into a clean pickling jar, then pour the spiced water over the onions.

Seal the jar tightly and leave it for 24 hours. It will be ready to serve with meals.
